Building Blocks: Basic Salad Dressings

This would be your instant, never fail, classic salad dressing with room for variety and need for minimal ingredients. I am providing the basic version with ideas for variations. You can store the dressing upto 2 weeks in the refridgerator.

1. Citrus Dressing: Serves 4-6 generous side salad portions

Ingredients
1/2 cup extra virgin olive oil, preferably mild and fruity version
4 tbsp frshly squeezed lemon juice ( honestly, sometimes I just use the bottled version but fresh makes it better)
salt and pepper to taste

Whisk all the ingredients together in a bowl till a nice emulsion forms.

Variations:
You can add things like minced garlic, garlic powder, variety of herbs to the emulsion for added flavor and variety. In case you want an orange dressing, substitute the lemon juice

for fresh orange juice.

2. Soy Ginger Dressing: Serves 4-6 generous side salad portions

Ingredients
1/3 cup soy sauce
1/4 cup sesame oil
1/4 cup water
1″ cube ginger, nicely grated

Whisk all the ingredients together to form a well mixed dressing.

Variations:
You can add toasted sesame seeds, a touch of wasabi paste or onion flakes to the dressing for suitable variations.
